Blogger and photographer Vanda Lewis has worked with North Carolina Sea Grant for more than three decades. Her posts feature recipes developed by the late Joyce Taylor, author of the popular resource book, <em><a href=\"https:\/\/uncpress.org\/book\/9781469683591\/mariners-menu\/\">Mariner\u2019s Menu: 30 Years of Fresh Seafood Ideas<\/a><\/em>. Saut\u00e9 onion and celery until tender. Remove from heat. Stir in crumbs, Parmesan, salt, pepper and basil.<\/p>\n\n\n\n<p>Stuff fish loosely. Brush with 1 1\/2 tablespoons melted butter. Lightly salt and pepper. Place meat in medium bowl.<\/p>\n\n\n\n<p>Melt margarine or butter in medium saucepan. Saut\u00e9 onion until tender. Remove from heat. Stir in parsley, Tabasco, lemon juice, cayenne and salt.<\/p>\n\n\n\n<p>Blend in mayonnaise, egg, and 1 cup bread crumbs. Gently blend into crabmeat, being careful not to break meat apart.<\/p>\n\n\n\n<p>Shape into silver dollar size cakes. Dredge lightly in remaining 2 cups bread crumbs.<\/p>\n\n\n\n<p>Fry in 3 tablespoons of hot oil until golden brown on one side, about 2 to 3 minutes. Turn and repeat on other side. Drain on paper towels. Broil about 4 inches from heat for about 5 minutes.<\/p>\n\n\n\n<p>Remove fish from oven. Spread with Parmesan mixture. Add onion, green pepper, celery leaves, celery, black pepper, salt, and mustard.<\/p>\n\n\n\n<p>Cook until vegetables are tender-crisp. Add to clam mixture. Stir in crumbs and mix well.<\/p>\n\n\n\n<p>Place in shells or ramekins. Sprinkle lightly with paprika.
