{"id":10606,"date":"2022-06-30T09:00:29","date_gmt":"2022-06-30T13:00:29","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=10606"},"modified":"2023-12-18T17:48:43","modified_gmt":"2023-12-18T22:48:43","slug":"striped-bass-with-spiced-rum-sauce","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/striped-bass-with-spiced-rum-sauce\/","title":{"rendered":"Striped Bass with Spiced Rum Sauce"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 \u00bd pounds striped bass fillets, skinless, cut into serving-size pieces<\/li>\n\n\n\n<li>4 tablespoons butter, melted<\/li>\n\n\n\n<li>\u00bd teaspoon salt<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground white pepper<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Place the rack in the top third of the oven and preheat the broiler.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">While fish is cooking, prepare Spiced Rum Sauce and keep warm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a small bowl, combine butter, salt and pepper. Brush fish with mixture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place fish on a greased broiler pan. Broil for about 10 minutes or until it flakes easily with a fork.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Tropical Sauce<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u2153 cup spiced rum<\/li>\n\n\n\n<li>2 tablespoons fresh lime juice<\/li>\n\n\n\n<li>2 tablespoons butter, melted<\/li>\n\n\n\n<li>\u00bd teaspoon minced garlic<\/li>\n\n\n\n<li>2 teaspoons finely chopped jalapeno pepper<\/li>\n\n\n\n<li>\u00bc teaspoon salt<\/li>\n\n\n\n<li>\u00bc cup banana, pureed<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground white pepper<\/li>\n\n\n\n<li>2 tablespoons water<\/li>\n\n\n\n<li>1 tablespoon chopped fresh parsley<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Combine rum and lime juice in a small saucepan. Simmer over medium heat for 4 to 5 minutes or until reduced by about one-third. Add butter, garlic, jalapeno, salt, pepper and water and combine until smooth. Mix in the pureed banana and simmer just until heated through. Remove from heat and stir in parsley. Striped bass&nbsp;<a href=\"https:\/\/ncseagrant.ncsu.edu\/coastwatch\/current-issue\/spring-2021\/magic-at-64-4-degrees\/\" target=\"_blank\" rel=\"noreferrer noopener\">aquacutlure is also growing,
