{"id":12426,"date":"2023-06-29T09:00:00","date_gmt":"2023-06-29T13:00:00","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=12426"},"modified":"2025-06-19T14:30:05","modified_gmt":"2025-06-19T18:30:05","slug":"orange-marinated-snapper","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/orange-marinated-snapper\/","title":{"rendered":"Orange-Marinated Snapper"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Recipe<\/strong><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 medium snapper fillets<\/li>\n\n\n\n<li>\u00bc cup fresh orange juice<\/li>\n\n\n\n<li>3 tablespoons fresh lemon juice<\/li>\n\n\n\n<li>1 teaspoon salt<\/li>\n\n\n\n<li>\u00bd teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>\u00be cup dry white wine<\/li>\n\n\n\n<li>\u00be teaspoon pressed garlic<\/li>\n\n\n\n<li>\u00bc cup butter<\/li>\n<\/ul>\n\n\n\n<p>Heat the oven to 400\u00b0 F.<\/p>\n\n\n\n<p>In a small, nonreactive bowl, combine orange juice, lemon juice, salt, pepper, wine and garlic. Place fillets in baking dish and pour marinade over them. Marinate in refrigerator for 20 minutes, turning once. Remove excess marinade.<\/p>\n\n\n\n<p>Brush fish with melted butter. Bake for 10 to 12 minutes, or until fish flakes easily when tested with a fork.
