{"id":14216,"date":"2024-02-15T09:00:00","date_gmt":"2024-02-15T14:00:00","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=14216"},"modified":"2024-02-15T07:13:03","modified_gmt":"2024-02-15T12:13:03","slug":"conch-whelk-stew","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/conch-whelk-stew\/","title":{"rendered":"Conch\/Whelk Stew"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 quart conch (whelk), cleaned, cut in small pieces and tenderized<\/li>\n\n\n\n<li>3 slices bacon, diced<\/li>\n\n\n\n<li>1 tablespoon oil<\/li>\n\n\n\n<li>1 tablespoon all-purpose flour<\/li>\n\n\n\n<li>8 cups water<\/li>\n\n\n\n<li>1 \u00bd teaspoons sea salt<\/li>\n\n\n\n<li>\u00bd&nbsp;teaspoon black pepper<\/li>\n<\/ul>\n\n\n\n<p>In a large pot fry the bacon. Remove bacon. Add oil and flour and cook for 2 minutes. Whisk in water. Add&nbsp;conch (whelk) and salt, stir well. &nbsp;Bring to boil for 15 minutes then skim the foam off the top, add black pepper and stir. (Watch closely to prevent from boiling over.)<\/p>\n\n\n\n<p>Cover and continue to cook for 1 hour, stirring occasionally. &nbsp;Add cornmeal dumplings, cook 30 minutes longer or until conch (whelk) is tender. If needed, adjust seasoning.<\/p>\n\n\n\n<p><em>Donna\u2019s Cornmeal Dumplings&nbsp;<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup plain medium ground cornmeal<\/li>\n\n\n\n<li>\u00bd cup all-purpose flour<\/li>\n\n\n\n<li>1 \u00bd teaspoons sea salt<\/li>\n\n\n\n<li>\u00be cup water<\/li>\n<\/ul>\n\n\n\n<p>Mix dry ingredients. Slowly add water and mix well. Next, form dumplings and add to stew. We do have a species of conch and several species of whelks here in NC. Both are gastropods which is a class of animals that includes land snails, slugs, and nudibranchs.
