{"id":14666,"date":"2023-11-30T09:00:00","date_gmt":"2023-11-30T14:00:00","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=14666"},"modified":"2023-12-18T15:21:37","modified_gmt":"2023-12-18T20:21:37","slug":"oysters-on-toast","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/oysters-on-toast\/","title":{"rendered":"Oysters on Toast"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 pint oysters, undrained<\/li>\n\n\n\n<li>2 tablespoons unsalted butter<\/li>\n\n\n\n<li>2 tablespoons olive oil<\/li>\n\n\n\n<li>1 clove garlic, minced<\/li>\n\n\n\n<li>1 medium onion, chopped<\/li>\n\n\n\n<li>3 tablespoons tomato paste<\/li>\n\n\n\n<li>1 \u00bd cups hot water<\/li>\n\n\n\n<li>\u00bd cup dry white wine<\/li>\n\n\n\n<li>\u00bd teaspoon dried oregano<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>1 teaspoon sugar<\/li>\n\n\n\n<li>6 slices French bread, spread lightly with butter<\/li>\n\n\n\n<li>1 tablespoon chopped fresh parsley<\/li>\n<\/ul>\n\n\n\n<p>Melt butter in a skillet. Add oil and heat thoroughly. Add garlic and onion and saut\u00e9 lightly. Blend in tomato paste. Add water and wine. Stir well. Add oregano, pepper and sugar. Stir to blend and simmer for 5 minutes.<\/p>\n\n\n\n<p>Meanwhile, toast bread, cut into points or triangles, and keep warm.<\/p>\n\n\n\n<p>Add oysters, together with their juice, to skillet. Baste several times with sauce and cook until oysters reach desired doneness. Place pieces of toast on individual plates. Remove oysters from sauce, place on toast and cover with sauce.
