{"id":14706,"date":"2023-12-07T09:00:00","date_gmt":"2023-12-07T14:00:00","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=14706"},"modified":"2023-11-21T16:36:45","modified_gmt":"2023-11-21T21:36:45","slug":"deep-fried-coconut-shrimp-with-orange-pineapple-dipping-sauce","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/deep-fried-coconut-shrimp-with-orange-pineapple-dipping-sauce\/","title":{"rendered":"Deep-Fried Coconut Shrimp with Orange-Pineapple Dipping Sauce"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1&nbsp;pound large shrimp, peeled and deveined<\/li>\n\n\n\n<li>1 \u00bd cups&nbsp;all-purpose flour<\/li>\n\n\n\n<li>\u00bc cup corn starch<\/li>\n\n\n\n<li>2&nbsp;eggs<\/li>\n\n\n\n<li>\u00be cup&nbsp;whole milk<\/li>\n\n\n\n<li>1&nbsp;\u00bd cups&nbsp;shredded unsweetened coconut<\/li>\n\n\n\n<li>\u00bd cup&nbsp;panko crumbs<\/li>\n\n\n\n<li>1<strong>&nbsp;<\/strong>teaspoon salt<\/li>\n\n\n\n<li>\u00bc teaspoon cayenne pepper<\/li>\n\n\n\n<li>salt, for shrimp<\/li>\n\n\n\n<li>peanut oil, for frying<\/li>\n<\/ul>\n\n\n\n<p>Add oil to deep-fat fryer and heat to 350\u00b0 F.<\/p>\n\n\n\n<p>In a shallow dish, combine flour and corn starch. Set aside.<\/p>\n\n\n\n<p>In a small bowl, whisk together eggs and milk. Transfer to another shallow dish. Set aside.<\/p>\n\n\n\n<p>In a third shallow dish, combine the coconut, panko, salt and cayenne pepper. <\/p>\n\n\n\n<p>Set up dredging station as follows: flour mixture, egg mixture, coconut mixture.<\/p>\n\n\n\n<p>Pat shrimp dry and lightly sprinkle with salt. Dredge shrimp in flour mixture and shake off excess. Dip in the egg mixture and shake off excess. Dredge shrimp in the coconut mixture, pressing lightly so that it sticks. Transfer coated shrimp to a sheet pan lined with parchment paper. <\/p>\n\n\n\n<p>Working in small batches, add shrimp to deep-fat fry basket. Fry for about 2 minutes or until done. Remove shrimp from fryer and transfer to a sheet pan lined with paper towels. Repeat the cooking method with remaining shrimp. Serve shrimp with Orange-Pineapple Dipping Sauce.<\/p>\n\n\n\n<p><em>Orange-Pineapple Dipping Sauce<\/em><em><\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd&nbsp;cup&nbsp;orange-pineapple jam<\/li>\n\n\n\n<li>\u215b cup honey<\/li>\n\n\n\n<li>1 teaspoon Dijon mustard<\/li>\n\n\n\n<li>1 teaspoon soy sauce<\/li>\n\n\n\n<li>\u00bc teaspoon Tabasco sauce<\/li>\n\n\n\n<li>\u00bd teaspoon red pepper flakes<\/li>\n\n\n\n<li>\u00bd teaspoon lemon juice<\/li>\n\n\n\n<li>1 tablespoon water<\/li>\n<\/ul>\n\n\n\n<p>In a small bowl, combine all ingredients.
