{"id":16294,"date":"2025-01-09T09:00:00","date_gmt":"2025-01-09T14:00:00","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=16294"},"modified":"2025-06-19T08:12:24","modified_gmt":"2025-06-19T12:12:24","slug":"sheepshead-and-asparagus-stir-fry","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/sheepshead-and-asparagus-stir-fry\/","title":{"rendered":"Sheepshead and Asparagus Stir-Fry"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 pound sheepshead, skinless fillets, cut into 1-inch pieces<\/li>\n\n\n\n<li>1 pound asparagus<\/li>\n\n\n\n<li>3 tablespoons oyster sauce<\/li>\n\n\n\n<li>1 \u00bd tablespoons dry sherry<\/li>\n\n\n\n<li>3 teaspoons sesame oil<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>4 tablespoons avocado oil, divided<\/li>\n\n\n\n<li>sea salt<\/li>\n\n\n\n<li>freshly ground black pepper<\/li>\n\n\n\n<li>5 ounces shiitake mushrooms, sliced<\/li>\n\n\n\n<li>cooked rice (optional)<\/li>\n<\/ul>\n\n\n\n<p>Wash asparagus, cut off tough ends and cut into bite-size pieces.<\/p>\n\n\n\n<p>In small container, whisk together oyster sauce, sherry, sesame oil and pepper.<\/p>\n\n\n\n<p>Heat 2 tablespoons oil in large skillet. Lightly salt and pepper fish and add to pan. Cook until almost done, stirring occasionally, about 4 minutes. Remove with slotted spoon.<\/p>\n\n\n\n<p>Add remaining 2 tablespoons oil and heat. Lightly salt asparagus and add to skillet. Cook until crisp tender, about 2 to 3 minutes. Add mushrooms and cook about 2 minutes. Stir in sauce mixture and toss to coat well. Return fish to pan and stir until done, about 2 to 3 minutes.
