{"id":3788,"date":"2012-11-02T14:02:41","date_gmt":"2012-11-02T18:02:41","guid":{"rendered":"http:\/\/marinersmenu.org\/?p=3788"},"modified":"2023-12-19T15:13:39","modified_gmt":"2023-12-19T20:13:39","slug":"oysters-and-mushrooms-au-gratin","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/oysters-and-mushrooms-au-gratin\/","title":{"rendered":"Oysters and Mushrooms au Gratin"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 pint standard oysters, liquid reserved<\/li>\n\n\n\n<li>2 tablespoons butter<\/li>\n\n\n\n<li>5 tablespoons flour<\/li>\n\n\n\n<li>\u00bd cup heavy cream<\/li>\n\n\n\n<li>\u00be teaspoon salt<\/li>\n\n\n\n<li>\u215b teaspoon paprika<\/li>\n\n\n\n<li>\u00bc teaspoon dry mustard<\/li>\n\n\n\n<li>\u215b teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>1 cup sliced fresh mushrooms, saut\u00e9ed in butter, drained<\/li>\n\n\n\n<li>1 teaspoon fresh lemon juice<\/li>\n\n\n\n<li>1 teaspoon Worcestershire sauce<\/li>\n\n\n\n<li>\u00bd cup fresh bread crumbs<\/li>\n\n\n\n<li>paprika<\/li>\n<\/ul>\n\n\n\n<p>Drain and dry oysters. Melt butter in medium saucepan over medium heat. Add flour and stir until blended. Slowly stir in \u00bd cup oyster liquid and cream. Add salt, paprika, mustard and pepper. Cook, stirring, until mixture comes to a boil and thickens. Reduce heat and add cooked mushrooms, lemon juice, Worcestershire and oysters. Continue to cook, stirring until edges of oysters begin to curl, but do not boil. Place in individual shells or ramekins. Sprinkle with bread crumbs and paprika.
