{"id":4051,"date":"2012-11-26T09:21:18","date_gmt":"2012-11-26T14:21:18","guid":{"rendered":"http:\/\/marinersmenu.org\/?p=4051"},"modified":"2024-08-04T08:22:19","modified_gmt":"2024-08-04T12:22:19","slug":"fettucini-with-trout-cheese-sauce","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/fettucini-with-trout-cheese-sauce\/","title":{"rendered":"Fettuccini with Trout-Cheese Sauce"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 medium skinless trout fillets<\/li>\n\n\n\n<li>\u00bc teaspoon salt<\/li>\n\n\n\n<li>\u00bc cup butter<\/li>\n\n\n\n<li>\u00bc cup flour<\/li>\n\n\n\n<li>\u00bd cup dry white wine<\/li>\n\n\n\n<li>1 cup light cream<\/li>\n\n\n\n<li>\u00bd cup freshly grated Parmesan cheese, divided<\/li>\n\n\n\n<li>\u00bc cup freshly grated Romano cheese<\/li>\n\n\n\n<li>\u00bc cup chopped green onion, including tops<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>1 pound spinach fettuccini<\/li>\n<\/ul>\n\n\n\n<p>Cut fillets into 1-inch strips. Sprinkle with salt. In heavy medium skillet, melt butter over medium heat. Saut\u00e9 trout 4 or 5 minutes or until done. Remove and set aside.<\/p>\n\n\n\n<p>Stir flour and add wine. Slowly blend in cream. Cook over medium heat, stirring constantly, until sauce thickens. Stir in \u00bc cup Parmesan, Romano, onion and pepper. When thoroughly blended, add fish and cook just until fish is heated through.<\/p>\n\n\n\n<p>Meanwhile, cook fettuccini according to package directions. Drain. Place on serving plates and top with sauce.
