{"id":9466,"date":"2020-02-27T09:00:06","date_gmt":"2020-02-27T14:00:06","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=9466"},"modified":"2023-12-20T10:08:13","modified_gmt":"2023-12-20T15:08:13","slug":"baked-spotted-trout-with-bacon-stuffing","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/baked-spotted-trout-with-bacon-stuffing\/","title":{"rendered":"Baked Spotted Trout with Bacon Stuffing"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 spotted trout fillets<\/li>\n\n\n\n<li>6 bacon slices<\/li>\n\n\n\n<li>\u00bc cup finely chopped onion<\/li>\n\n\n\n<li>2 cups soft bread crumbs<\/li>\n\n\n\n<li>\u00bc cup chicken broth<\/li>\n\n\n\n<li>\u00bc teaspoon salt<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>\u00bc teaspoon sage<\/li>\n\n\n\n<li>\u00bc teaspoon thyme leaves<\/li>\n\n\n\n<li>1 \u00bd tablespoons butter, melted<\/li>\n\n\n\n<li>salt<\/li>\n\n\n\n<li>freshly ground  pepper<\/li>\n<\/ul>\n\n\n\n<p>Preheat the oven to 375\u00b0 F.<\/p>\n\n\n\n<p>In a medium saucepan, cook bacon. Remove bacon and dice. Discard all but 1 tablespoon of bacon drippings. Add onion and cook until tender. Stir in crumbs, broth, \u00bc teaspoon salt, \u00bc teaspoon pepper, sage, thyme and bacon.<\/p>\n\n\n\n<p>Layout fillets on a work surface, skin sides up. Spoon stuffing onto fillets. Roll up each fillet and place seam side down on a parchment-lined baking sheet. Brush with 1 \u00bd tablespoons melted butter. Lightly salt and pepper. Bake for about 10 to 12 minutes or until done.
