{"id":9656,"date":"2022-08-11T09:00:08","date_gmt":"2022-08-11T13:00:08","guid":{"rendered":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/?p=9656"},"modified":"2023-12-20T09:44:13","modified_gmt":"2023-12-20T14:44:13","slug":"pistachio-encrusted-triggerfish","status":"publish","type":"post","link":"https:\/\/ncseagrant.ncsu.edu\/mariners-menu\/pistachio-encrusted-triggerfish\/","title":{"rendered":"Pistachio-Encrusted Triggerfish"},"content":{"rendered":"\n\n\n\n\n<h3 class=\"wp-block-heading\">Recipe<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 triggerfish fillets, skinless<\/li>\n\n\n\n<li>1 cup flour<\/li>\n\n\n\n<li>\u00bd teaspoon salt<\/li>\n\n\n\n<li>\u00bc teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>1 egg, beaten<\/li>\n\n\n\n<li>\u00bd cup milk<\/li>\n\n\n\n<li>\u00bd teaspoon pressed garlic<\/li>\n\n\n\n<li>\u00bd cup shelled pistachios, finely chopped<\/li>\n\n\n\n<li>2 tablespoons canola oil<\/li>\n\n\n\n<li>2 tablespoons butter<\/li>\n<\/ul>\n\n\n\n<p>In a shallow dish, combine flour, salt and pepper. In another dish, combine egg, milk and garlic. Dredge fish in flour mixture, shaking off excess. Dip the top side of the fish in egg mixture, then coat it with pistachios. To adhere, press nuts gently. Place in pan and refrigerate for 15 minutes.<\/p>\n\n\n\n<p>Heat oil in a large skillet. Add butter and allow to heat up. Saut\u00e9 fish, nut side down, until just golden brown, about 3 to 4 minutes. Be careful not to burn nuts. Flip over and repeat. Remember that cooking times are an estimate.
