Baked Spotted Trout with Bacon Stuffing

- 4 spotted trout fillets
- 6 bacon slices
- ¼ cup finely chopped onion
- 2 cups soft bread crumbs
- ¼ cup chicken broth
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon sage
- ¼ teaspoon thyme leaves
- 1 ½ tablespoons butter, melted
- salt
- freshly ground pepper
Preheat the oven to 375° F.
In a medium saucepan, cook bacon. Remove bacon and dice. Discard all but 1 tablespoon of bacon drippings. Add onion and cook until tender. Stir in crumbs, broth, ¼ teaspoon salt, ¼ teaspoon pepper, sage, thyme and bacon.
Layout fillets on a work surface, skin sides up. Spoon stuffing onto fillets. Roll up each fillet and place seam side down on a parchment-lined baking sheet. Brush with 1 ½ tablespoons melted butter. Lightly salt and pepper. Bake for about 10 to 12 minutes or until done. Cooking time will vary depending on the thickness of the fillets.
