Baked Striped Bass Parmesan


  • 2 pounds striped bass fillets, skinless, cut into serving-size pieces
  • 1 cup sour cream
  • ½ cup freshly grated Parmesan cheese
  • ½ cup sliced green onions, including tops
  • ¼ cup chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon Tabasco sauce
  • salt
  • freshly ground white pepper
  • paprika

Preheat the oven to 450° F.

Combine sour cream, cheese, onions, parsley, lemon juice and Tabasco.  Place fish in a greased baking dish and sprinkle lightly with salt and pepper.  Spread sour cream mixture over fish and sprinkle with paprika. Bake until done, about 15 minutes.
