Fried Fresh Mullet Fillets and Roes
Recipe
- 6 mullet fillets, skin-on
- 1 ¼ cups seafood breading mix
- 6 small mullet roes
- freshly ground salt
- oil for frying
Salt the mullet roes on both sides, set aside.
Pre-heat about ⅛-inch of oil in an electric skillet to 350° F.
Place seafood breading mix in a shallow dish. Dredge both sides of the fish with the breading mix and shake off excess. Place the fish, flesh side down, in the skillet and fry for about 4 minutes. Flip over and fry for 4 to 6 minutes or until done. Remove fish and place on a baking sheet lined with paper towels.
If needed, add more oil to the skillet and bring oil back up to 350° F. Place the salted roes in the skillet and fry for 4 to 6 minutes. Flip over and fry for 4 to 6 minutes or until done. Remove roes and place them on a baking sheet lined with paper towels. Serve with the fish.

Note: Larger mullet roes will require a longer cooking time.
