Simple Scallop Fritters


  • 1 pound bay scallops, chopped (or sea scallops)
  • 1 cup self-rising flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons grated sweet onion
  • ½ cup water
  • oil

In a large skillet, heat about ¼-inch of oil to medium-high.

In a medium bowl, combine flour, salt, pepper, onions, and water. Add chopped scallops and mix gently.

In batches, drop batter by the heaped tablespoonful into the skillet. Do not overcrowd the skillet. Fry fritters for about 3 minutes on both sides or until golden brown. Transfer to a pan lined with paper towels.
