Baked Oysters

Recipe

  • 1 pint oysters, drained
  • 2 sliced bacon
  • 2 tablespoons butter
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup thinly sliced green onion
  • flour

Preheat oven to 400° F.

Fry bacon until crisp. Remove bacon from pan, reserving 1 ½ tablespoons bacon grease. Add butter to pan and melt. Add lemon juice, pepper and green onion. Cook until onion is tender, about 2 minutes.

Place oysters in lightly greased ramekins. Dust lightly with flour. Spoon butter mixture over oysters. Bake about 8 to 10 minutes or until done. Sprinkle with crumbled bacon.
