Broiled Fish with Garlic and Parsley

Recipe

  • 2 pound fish fillets
  • ¼ cup vegetable oil
  • black pepper, freshly ground
  • 2 tablespoons bread crumbs
  • paprika
  • 2 teaspoons garlic, pressed
  • 2 teaspoons fresh parsley, minced
  • juice of ½ lemon

Heat the broiler.

Place fillets skin side down on lightly oiled baking pan. Brush with half the oil. Sprinkle with pepper, bread crumbs, then paprika.

Broil about 4 inches from source of heat for about 5 minutes. Meanwhile, heat remaining oil in a small saucepan and add garlic.

Drizzle garlic oil mixture over fish. Sprinkle with parsley and lemon juice. Watch closely and continue broiling about 2-5 minutes or until fish flakes easily when tested with a fork.
