Broiled Mediterranean Striped Bass


  • 1 ½ pounds striped bass fillets, skinless, cut into serving-size pieces
  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • ½ teaspoon chopped fresh garlic
  • 2 teaspoons chopped fresh oregano
  • 3 tablespoons chopped fresh thyme
  • 3 tablespoons chopped fresh parsley
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Place the rack in the top third of the oven and preheat the broiler.

In a small bowl, combine olive oil, lemon juice, garlic, oregano, thyme, parsley, salt and pepper.

Place fish on an oiled broiler pan. Brush with half of the herb mixture.

Broil about 8 to 10 minutes, basting fish with the remainder of the herb mixture about halfway through cooking time.
