Cilantro-Marinated Triggerfish Fillets

  • 1 ½ pounds triggerfish fillets, skinless
  • 6 tablespoons butter, melted
  • ½ teaspoon garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon white pepper, freshly ground
  • ¼ cup cilantro, finely chopped

Set oven rack about 6 inches from the heat source and preheat the oven broiler.

Combine butter, garlic, salt, pepper and cilantro in a small bowl.

Place fish in a glass baking dish, flesh sides up, and pour marinade over. Cover and refrigerate for 15 minutes.

Remove fillets from marinade. Place the fish on a broiler pan that has been coated with cooking spray. Place the pan under the broiler and cook for 6 to 8 minutes, or until done.
