Golden-Fried Soft-Shell Crabs

Recipe

  • 6  soft-shell crabs, cleaned
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons soy sauce
  • salt
  • freshly ground black pepper
  • flour
  • 1 egg, beaten
  • ⅔ cup fresh bread crumbs
  • oil for frying

Combine lemon juice and soy sauce. Brush on crabs. Season with salt and pepper. Refrigerate for 1 hour.

Dredge crabs in flour, dip in egg and coat lightly with crumbs. Deep-fry at 375° F until crisp and golden brown, about 4 to 5 minutes. Serve with tartar sauce.
