Panko-Encrusted Sea Mullets

Recipe

  • 1 ½ pounds sea mullet fillets
  • 1 cup flour
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cayenne pepper
  • ½ cup freshly grated Parmesan cheese
  • 2 eggs
  • 1 cup panko crumbs
  • 2 tablespoons canola oil
  • 2 tablespoons butter

In a shallow dish, combine flour, salt, peppers and Parmesan. Beat eggs in another shallow dish. Dip fish in the flour mixture and next in the beaten eggs. Coat fish with panko crumbs.

Heat oil in a skillet to 375° F. Add butter and melt. Place fish in pan and cook for about 4 minutes on each side, cooking until done. Determine cooking time based on the thickness of fish.
