Smoked Fish Bisque
Recipe
- 6 ounces smoked fish, flaked
- ¼ cup chopped onion
- ¼ cup chopped celery
- 4 tablespoons butter
- 4 tablespoons flour
- 1 teaspoon salt
- ¼ teaspoon freshly ground white pepper
- ¼ teaspoon paprika
- 2 ½ cups milk
- 2 cups light cream
- ¼ cup finely chopped fresh parsley
In medium saucepan, melt butter. Add onion and celery and cook until tender. Blend in flour, salt, pepper and paprika. Add milk slowly and cook, stirring constantly, until mixture begins to thicken. Add cream and continue to cook until thick, about 20 minutes. Add fish and heat. Garnish with chopped parsley.
