Baked Fish with Sherry

Recipe

  • 1 pound flounder, skinless fillets (or other white fish)
  • ¼ cup unsalted butter, melted
  • ½ cup minced onion
  • ½ cup dry sherry
  • 6 fresh mushrooms, finely chopped
  • black pepper, freshly ground

Heat the oven to 400° F.

Place fillets in a shallow, greased baking dish. Brush with butter. Sprinkle on onion and mushrooms. Add sherry. Season with pepper. Bake for 15 to 20 minutes or until fish flakes easily when tested with a fork.

DID YOU KNOW?

Flounder and other flatfishes have eyes on either side of their head and swim upright as larvae.  As they develop, one eye migrates to the opposite side of the head and they become benthic (bottom-dwelling).
