Black Sea Bass Dip with Fresh Tarragon


  • 1 cup flaked black sea bass
  • ¾ cup sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons finely chopped celery, finely chopped
  • 2 tablespoons chopped green onions, including tops
  • ¼ teaspoon freshly ground white pepper
  • 1 tablespoon chopped fresh tarragon
  • ¼ teaspoon salt

Poach fish in lightly salted water.

In a medium bowl, combine sour cream, mayonnaise, celery, onions, pepper and tarragon. Gently blend in fish, being careful not to break flakes apart.

Chill thoroughly. Serve with assorted vegetables and chips.
