Recipe
- 1 pound flounder fillets
- ¼ cup butter
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 2 tablespoons fresh snipped chives (or 1 tablespoon dried)
- 3 tablespoons fresh snipped dill (or 1 ½ teaspoons dried)
- ¹⁄₁₆ teaspoon cayenne pepper
- ½ teaspoon salt
- paprika
Preheat oven to 450° F.
In small saucepan, melt butter over medium heat. Stir in lemon juice, parsley, chives dill, cayenne and salt.
Place fillets in lightly greased baking dish. Pour butter mixture over top. Sprinkle with paprika. Bake, uncovered until fish flakes easily with a fork, about 8 to 10 minutes. Transfer to warm platter.
Boil pan juices over high heat until reduced to about ¼ cup. Pour over fish.
