Mediterranean Fish Stew

Recipe

  • 1 pound grouper, cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 1 cup chopped onion
  • 1 teaspoon pressed garlic
  • 1 (14.5-ounce) can tomatoes with sauce, undrained
  • 1 (14.5-ounce) can vegetable broth (or fish broth, if available)
  • ¼ cup chopped fresh basil
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ⅓ cup dry white wine

Heat oil in large pot over medium heat. Add onion and garlic and sauté lightly. Add tomatoes, broth, basil, salt and pepper. Heat. Lower heat to simmer and add wine. Continue to simmer 10 minutes.

Raise heat and add fish. Return to simmer and continue to cook until fish is done, about 10 minutes.
