Open-Face Oyster Sandwich

Recipe

  • 2 pints standard oysters, drained
  • ½ cup butter
  • 1 teaspoon pressed garlic
  • 6 thick slices of French bread
  • 1 cup freshly grated mozzarella cheese

In a small sauce, melt ¼ cup of butter over medium heat. Add garlic and cook until soft. Remove from heat. Brush garlic butter on one side of each bread slice. Place, garlic side up, in a shallow baking pan. Cook at 350° F for about 2 to 3 minutes. Turn bread over and repeat.

While bread is toasting, melt ¼ cup of butter in a large skillet. Add oysters and cook at 375° F until done about 2 to 3 minutes. Turn and repeat.

Use a slotted spoon to lift oysters out of the skillet and place them on toast. Sprinkle with cheese. Place under broiler until cheese is melted, about 5 minutes.
