Grilled Bahama-Style Wahoo

Recipe

  • 1 ½ pounds wahoo fillets, cut into serving-size pieces
  • 3 tablespoons butter, melted
  • 3 tablespoons fresh basil, chopped
  • 3 tablespoons fresh onion, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground

Preheat the grill to medium-high.

In a small bowl, combine butter, basil, onion, salt and pepper.

Brush both sides of fish with butter mixture. Place on well-oiled grill, topsides up. Cook about 4 to 5 minutes. Turn and cook another 4 to 5 minutes or until done.
