Golden-Fried Soft-Shell Crabs
Recipe
- 6 soft-shell crabs
- 2 tablespoons fresh lemon juice
- 2 tablespoons soy sauce
- salt
- freshly ground black pepper
- flour
- 1 egg, beaten
- ⅔ cup fresh bread crumbs
- oil for frying
Combine lemon juice and soy sauce. Brush on crabs. Season with salt and pepper. Refrigerate for 1 hour.
Roll crabs in flour, dip in egg and coat lightly with crumbs. Deep-fry at 375° F until crisp and golden brown, about 4 to 5 minutes. Serve with tartar sauce.
